Ingredients

  • 3 pounds baby back ribs, trimmed

  • 1/4 cup The Bold Signature Rub

  • 1/2 cup barbecue sauce, your favorite brand

  • 1 tablespoon olive oil

  • 1 cup water

Directions

  1. Preheat your grill to 225°F (107°C). If using a charcoal grill, set it up for indirect cooking with coals on one side.

  2. Remove the membrane from the back of the ribs for better flavor penetration. To do this, slide a knife under the membrane at one end, then grab it with a paper towel and pull it off in one piece.

  3. Rub the baby back ribs all over with olive oil. This will help the rub stick better and add flavor.

  4. Generously sprinkle The Bold Signature Rub over both sides of the ribs, pressing it into the meat for maximum flavor. Let the ribs sit at room temperature for about 15 minutes to absorb the rub.

  5. Place the ribs bone-side down on the grill grates away from the heat source (indirect heat). Close the lid and smoke the ribs for about 3 hours, adding a handful of wood chips (like hickory or applewood) to the coals if desired, for extra smokiness.

  6. After 3 hours, brush the ribs with barbecue sauce, then continue grilling for an additional 30 minutes to 1 hour, until the sauce is caramelized and the ribs are tender. The internal temperature should read 190°F (88°C) when done. Check for tenderness by gently pulling on the meat; it should feel soft and release from the bone easily.

  7. Once cooked, remove the ribs from the grill and let them rest for 10 minutes before slicing. Serve with extra barbecue sauce on the side.
