Ingredients

  • 2 pounds beef roast

  • 2 cups Yukon Gold potatoes, diced into 1-inch pieces

  • 1 large onion, sliced

  • 1 medium green bell pepper, sliced

  • 1 medium yellow bell pepper, sliced

  • 2 cups beef broth

  • 1 cup red wine

  • 3 tablespoons The Bold Signature Rub

Directions

  1. Sprinkle The Bold Signature Rub evenly over the beef roast, ensuring it is well coated on all sides. Allow the roast to sit for 15 minutes to absorb the flavors.

  2. In the bottom of a large crockpot, place the diced Yukon Gold potatoes, sliced onion, and sliced green and yellow peppers.

  3. Lay the seasoned beef roast on top of the vegetables in the crockpot.

  4. Pour the beef broth and red wine over the roast and vegetables, ensuring the liquid covers most of the ingredients.

  5. Cover the crockpot with the lid and set it to cook on low for 8 hours or on high for 4 hours, until the beef is tender and reaches an internal temperature of 145°F (63°C).

  6. Once cooked, remove the beef roast from the crockpot and let it rest for 5 minutes before slicing.

  7. Serve the sliced beef roast with the vegetables and some of the cooking liquid spooned over the top.
